The ultimate superhero cake, three tiers of chocolate cake with fondant icing.  I love the way the symbol came out on the top.

Blue hydrangea flowers

I have often looked at the beautiful sugar flowers made by the very talented Jacqueline Butler of Petalsweet.  In particular I just love the hydrangeas she makes.  So finally I’ve had a go at making them.

Just to make it even more difficult I made these completely edible so no wire used – this did make it hard to arrange them closely.

The cake was a fruit cake made by my neighbour, who is a great cake baker but was looking for someone else to ice and decorate it.

Princess and Pirate cake

After being asked for a Princess and Pirate themed cake, I was a bit stumped as to how to do it.  I looked at a lot of pictures but just couldn’t feel it.  Thankfully Kate sent me some pictures and ideas as to what she wanted – two layers, the bottom one black with skull and crossbones.

Great, this gave me a starting point… and I’d been thinking single layer.  As ideas grew it was time to get stared first by making the princess and the pirate.

While he was headless I got a bit concerned that he was a bit too well dressed for a pirate and might look a bit feminine.  Add stubble my sister suggested.  Great idea, so I created the head, complete with stubble, added it on and he looked much more pirate like.


The princess was very delicate and fiddly.  This was a first making a long gown, had a couple of goes at it before getting it to sit right without tearing. I gave her lovely long black hair to match the real Kate, well a bit longer than Kate’s but you get the idea.


Lastly make the two cakes the bottom layer red velvet and the top chocolate. Crumb coated each then covered with the coloured fondant.  Very tricky in this heat and humidity – everything seems way to0 sticky.

The cake was a hit, the party was great fun.  Happy 21st Kate!

Lily, roses and jasmine for Alex

My wonderful friend Alex is having her 40th. A few weeks before we were out for a walk around our neighbourhood feeling very blessed having such lovely beaches at our doorstep. On our way we were talking about how special things look up close – you know when you really look. We were admiring flowers and came across some Jasmine. This sparked a conversation about favourite flowers and became the inspiration for Alex’s cake.

Jasmine and lilies are two of her favourite flowers, so what’s could be more perfect for her cake.  I also popped some roses in there to fill in the gaps.

This was my first attempt at doing both of these flowers and first go using wire – I usually prefer to have completely edible things on the cake but made an exception this time.

Playing about with leftovers

I had some left over icing to use up, so tried out some new designs.  I like the way the red came out, it was make from some left over mint green mixed with plenty of red gel colouring (no taste of course) – good resulting colour.
