Christmas cookies

This year I’ve baked gingerbread Christmas cookies.  The designs celebrate New Zealand and UK Christmas’.  While here in NZ we have summer and pohutukawa flowers, it’s snowing on family in the UK.

Pohutukawa is a New Zealand native tree that flowers in summer (usually starts just before Christmas) and is often called the Kiwi Christmas tree.  The trees mostly grow coastally – many kiwis go to the beach  for Christmas holidays, so seeing them in bloom makes it feel like Christmas.
